Pot Roast a la Vivian

  • Sirloin Tip Roast (or Angus roast)
  • 1 envelope of Lipton’s (or similar) onion soup mix
  • 1 red onion, sliced
  • 1 cup of red wine

Line bottom of slow cooker OR stove-top pot with red onion slices. Lay roast on top of onion slices. Sprinkle onion soup mix over roast. Pour red wine over roast or beside the roast.

If you are using a slow cooker, cook on medium 6-8 hours. If you are cooking on the stove top, cook on low heat, covered, about 3-4 hours.

This recipe was submitted by Katie’s mom, by special request of Katie’s brother-in-law.

Mom is the nanny to one of Katie’s nieces, Vivian. Vivi, who is just 1 1/2, loves to pull my sister’s cookbooks off the shelf. Mom decided to start reading the recipes to Vivi, and she loved listening to the recipes! Some of the recipes that Vivi “found” sounded so good, Mom decided to make them. This is one of them, and that is why it is called Pot Roast a la Vivian!

Notes: My crock pot doesn’t have a medium setting and we are gone longer than 8 hours during the day anyway, so we cooked it on low. I also seared the meat before placing it in the crock pot, which I always do for anything with meat added like this.

We thought this recipe turned out great, although we would put two onions instead of one. We’d line the bottom with one onion, and then put one on top of the roast after we sprinkle the soup mix on it. But we love onions, so some of you may like it as is.
