- 1 1/3 cups orange juice
- 1 T lemon juice
- 3/4 cup sugar
- 2 egg whites
- 1/2 cup water
- orange rind, finely grated [I decided this meant rind of one orange.]
- 1/2 cup cream
Simmer sugar and water for 10 minutes. In a small bowl, beat egg whites until foamy. Set aside. Add orange rind to sugar mixture and cook for 5 minutes. Remove from heat and cool. In a large bowl, mix juices. Add rind mixture. Fold in beaten egg whites along with cream. Pour in ice cream maker and process until desired consistency.
From the Donvier Ice Cream Cookbook
Katie: Wow! This was so good! I really don’t know how to explain the deliciousness that was the orange sherbet! If you have an ice cream maker, you’ve got to try this. I doubled the recipe because I thought our ice cream maker was bigger than the Donvier one, but all of it didn’t fit. The original amount wouldn’t have filled it, though, so I’m not sure what the optimal amount would be. If you have a bigger ice cream maker, you’ll need to increase the recipe even more.
Gray: This is the best thing that has ever come out of our ice cream maker. I love sherbet, and this was fantastic. I don’t know what more to say about it other than you really need to try this one.
