White Barbecue Sauce

“When you’re looking for something different to serve with barbecued chicken, turkey, and even pork, this attention grabber is just what the doctor ordered. White barbecue sauce originated at the legendary Big Bob Gibson Barb-B-Q in Decatur, Alabama, but today you find it throughout the entire northern part of the state. Here’s my version. You must use real mayonnaise.” – Steve Raichlen

  • 1 t coarse salt, or more to taste
  • 1 t black pepper
  • 1/2 t sugar
  • 2 T minced onion
  • 1 clove garlic, minced
  • 1 cup mayonnaise
  • 1/2 cup distilled white vinegar, or more to taste

Combine the salt, pepper, sugar, onion, and garlic in a small nonreactive mixing bowl and mash to a paste with the back of a wooden spoon. Stir in the mayonnaise and vinegar. Taste for seasoning, adding salt or vinegar as necessary. Transfer the sauce to clean (or even sterile) jars and store in the refrigerator for 4 to 5 days.

Gray: I have wanted to try this sauce for some time now, but I only got serious about it when I started thinking about making my own sauces and rubs recently.  This sauce is unique and is typically found in and around northern Alabama and not too far past that.  I wanted to make it but I really didn’t know what it would be like.  After I made it up and tasted it, the sauce was very different from what I expected, but quite tasty.  I let it set up for a few hours before I put it on the chicken.  The resulting chickens were fantastic.  It really is a unique flavor and it is creamy and tangy and we will definitely be making this one again!

Katie: I was looking at the sauce after Gray had made it, and all I could think is that it looked like gravy. I couldn’t imagine what it would taste like, but I’m game to try something new. Chicken is versatile, so I don’t think that it will be too terrible. Well, I can tell you that this sauce is AMAZING! We put the rub from last week on the chicken, then followed up with this sauce. The chicken was wonderful with this sauce. It even had me, who usually only cuts the chicken with a knife and fork, picking up the chicken to get all of it off the bone. Delicious!

    I’ve heard of this sauce before but never had it, I guess even Birmingham is too far south. I always thought it looked kinda like ranch dressing, which since I love ranch is not a bad thing, but seemed a little odd for BBQ, but I’d love to try it. Two thumbs up from both you guys, it must be good!

    A restaurant in Florida serves a similar sauce with French fried onion rings. It is really good. Thanks for sharing.

  3. We’ve never had it in a restaurant, but I bet this sauce wold be good with onion rings! We now need to visit somewhere that serves this to see how ours compares.

    Hog Heaven in Nashville, TN makes a BBQ FIGHT CLUB Kickin’ Chicken White BBQ Sauce. Very different from Alabama White Sauce. If you like the Alabama version you should try this. If you don’t like the the Alabama version then you should really try this. Best thing is you don’t have to leave home to get it. We sell it online and in William-Sonoma stores all across American and Canada. Or Just come by the Restaurant and get it on your favorite BBQ.
