Eggs with Tomatoes

  • 2 cups Plain Tomato Sauce (see below)
  • 3 Tbsp butter
  • 1 Tbsp olive oil
  • 2 medium onions, thinly sliced
  • Salt and freshly ground pepper to taste
  • 6 large eggs
  • 8 Tbsp freshly grated Parmesan cheese

Prepare Plain Tomato Sauce.  Melt butter with oil in a large skillet. When butter foams, add onions. Saute over medium heat until pale yellow. Add tomato sauce and season with salt and pepper. Break eggs into skillet and cook about 1 minute. Spoon a generous tablespoon Parmesan cheese over each egg.

Eggs with Tomatoes - All Done!Place 2 eggs on each of 3 serving plates. Spoon tomato sauce around eggs, serve immediately.

Yield: 3 servings

PlainNorthern Italian Cooking Tomato Sauce

  • 1 Tbsp olive oil
  • 1 (28-oz) can crushed Italian-style tomatoes
  • Salt and freshly ground pepper to taste

Heat oil in a medium saucepan. Press tomatoes through a food mill or sieve to remove seeds, add tomato pulp to saucepan. Simmer uncovered 15-20 minutes. Season with salt and pepper.

Yield: about 2 cups of sauce

Gray: I wanted to make this for a long time, but was intimidated.  I think the fascination was that it was so different from how I have prepared eggs before.  It is basically poaching them in tomato sauce.  My trepidation was unfounded. It was delicious, and only took a few minutes to put together.  This is a great, inexpensive weeknight meal.  I cut the recipe back to feed just 2 servings, and we used some Calvander cheese from Chapel Hill Creamery instead of the Parmesan. I hope you give this a try and enjoy it as much as we did.  I served it with pasta on the side to help stretch the meal.  We will definitely be doing this one again.

Katie: Yum! I am not sure how a recipe that seems so strange to me can taste so good! If I think about it, I like everything that goes into the recipe, so why wouldn’t I like it? You can adjust the cooking time for the eggs in order to get the eggs cooked how you like them. Ours were extra large eggs and one of mine was very slightly runny in the center and the other was firm. Both were delicious! I can’t wait to try this one again!
